SUP MERAH SINGAPORE

I ate this special food at my uncle house in JB few years ago. My auntie, Zakiah learned how to cook this food from my auntie, Mak Ngah- who is a singaporean. It is very popular in Singapore and quite expensive in JB. Because we must use "Tulang" in this recipe, this is the main contribution of why it is quite costly.

My auntie told me the main ingredients- cili kisar, sos cili, sos tomato, tomato puree, rempah sup, and we must add some vegetables at the end (like sawi, or kailan,- green vegetables), but don't ever put kangkung or bayam in this food ok. She just gave me a rough measurement and I didn't jot it down.

I tried to find this recipe in the internet based on the guideline given by Auntie zakiah, and I think this recipe is very similar to the one that my auntie had explained. I tried to cook based on this recipe and the taste was absolutely fantastic!
I am sorry I can't remember the source of this recipe. I found this from the internet few months ago and I also want to extend my wholehearted thanks to the owner of this recipe.

SUP MERAH SINGAPORE
Bahan-Bahan
2 kg tulang (di bersihkan)
6 biji bawang putih
2 biji bawang besar
1 sudu makan rempah sup
1 tin kecil tomato puree (anggaran dalam 2.5-3 sudu makan tomato puree)
3 senduk kecil sos tomato
3 senduk cili kisar yang telah di tumis hingga naik minyak (masukkan sedikit demi sedikit- dan adjust ikut kepedasan yang diingini)
sedikit lada sulah
2 biji telur
sayur sawi
minyak secukupnya

Cara-cara
1. Rebus tulang dengan 1 sudu rempah sup hingga lembut. Air jangan terlampau banyak, sekadar mecukupi untuk menutup tulang.
2. Kisar bawang putih, bawang merah dan halia. Tumis hingga garing.
3. Masukkan cili kisar (yang telah di tumis sebelumnya) - gaul rata
4. Masukkan bahan yang ditumis ini ke dalam periuk yang berisi rebusan tulang tadi.
5. Masukkan tomato puree, sos tomato dan lada sulah. Masak hingga kuahnya pekat. (adjust jika perlu, etc- jika nak pedas dan lebih merah, tambahkan cili kisar, ataupun boleh juga di tambahkan sos tomato untuk rasa yang agak masam-masak sikit).
6. Pecahkan telur dalam mangkuk dan kacau dengan garfu. Tabur telur dalam sup merah dan biarkan untuk beberapa minit. Jangan di kacau sup itu buat sementara supaya telur tu masak.
7. Akhir sekali masukkan garam, gula dan perasa, masukkan sayur sawi dan terus tutup api.

Note: Aisyah takde stock sawi jadi aisyah gunakan sayur kailan- tapi alhamdullillah rasanya pun best!
Hidang dengan roti perancis. Tapi kalau nak ala-ala Malaysia boleh je makan dengan nasi putih atau nasi himpit.
